The government authority in Natick, Massachusetts is seeking alternative protein technologies services focused on research, product development, consumer testing, and demonstration samples. The scope includes innovative product development research and consumer research related to alternative proteins, along with the provision of food samples to demonstrate the maturity of manufacturing technologies.
The requested capabilities include advanced technologies and processes involving fermentation, precision fermentation, or other novel biomanufacturing methods that improve the production of alternative proteins. The work also includes development of innovative meat-alternative products intended for military rations, with attention to nutrition, shelf stability, and palatability.
Vendors should also be able to conduct comprehensive consumer research such as focus groups, sensory panels, and field testing to improve acceptance and consumption of alternative proteins within a military population. Demonstration food samples must have Generally Recognized as Safe (GRAS) status.
