DESCRIPTION

The government authority in McKinney, Texas is seeking a vendor to manage and operate airport terminal food and beverage concessions. The selected operator will be responsible for all aspects of staffing, training, daily operations, and the procurement and sale of food and beverage items to support both current and expanding passenger demand in the terminal.

The concessions program is focused on quick-serve and grab-and-go offerings, including breakfast and coffee options for morning travelers and a variety of baked goods, packaged snacks, cold drinks, and prepared meal items throughout the day. Menus are expected to highlight local North Texas flavors through partnerships with local roasters, bakeries, barbecue, and Tex-Mex providers, and should also include kid-friendly, healthy, and clearly labeled allergen-free choices.

Key operational standards require a fast service experience—average order-to-handoff should not exceed 4 minutes for coffee and cold items and 10 minutes for made-to-order hot items during peak hours. Core menu items must be available at least 95% of the time, service areas should be inspected and reset regularly throughout the day, and all critical equipment must remain operational for at least 98% of operating hours, backed by preventative maintenance. The contract will span three years.
